Ingredients for the marinade:

Yogurt 2 Cups

Large Minced Garlic Cloves

Fresh Minced Ginger 1½ piece

Red Chilly Flakes 1 tsp

Roasted Cumin Seeds 1 tsp

Black Pepper 1 Pinch

Salt as per taste

Vegetables:

Zucchini

Carrot (Thin Slices)

Red Onions (Wedges)

Wedges Bell Peppers (Wedges)

Potatoes

Corn on the cob

Procedure:

  • Toss your selection of vegetables with the marinade in the bowl
  • Refrigerate for 1 hour
  • Lift vegetables from the marinade and stag it on the grill without letting them touch each other
  • Season with salt and pepper
  • Grill slowly, until lightly browned and cooked through
  • Test by piercing with a knife
  • Serve hot

Grilled Fruit Chaat

Ingredients for the marinade:

Mustard Oil ¼ Cup

Vinegar 2 tbsp

Anardana Powder 1 tsp

Sugar 1 tsp

Crushed Black Pepper 1 tsp

Deghi Mirch ¼ tsp

Roasted Cumin Powder ¼ tsp

Black Salt ¼ tsp

Garam Masala ¼ tsp

Salt as per taste

Honey 1 tsp

Hing 1 pinch

Roasted Chana Dal Powder 2 tbsp

Fruits:

1 Pineapple (semi-ripe)

3 Guavas

3 Green Apples

2 Pears

2 Potato

Procedure:

  • Rub mustard oil, vinegar, anardana powder, sugar, crushed black peppers, deghi mirch and roasted cumin powder.
  • Keep rubbing the mix for 5 minutes to make a good blend
  • To this blend add black salt, garam masala, salt, honey and hing
  • Thicken this mixture with roasted chana dal powder
  • Cut the fruits in bite size pieces
  • Coat with the marinade and immediately roast on a grill or in a hot oven.
  • Serve warm
